LA PALOMA SANGRIENTA (THE BLOODY DOVE) COCKTAIL
This is a twist on the classic Mexican cocktail, La Paloma, a combination of tequila and grapefruit. Adding a bit of grenadine gives it a great graduated color effect, and it also adds a little more sweetness to the mix. Serve with a cocktail stirrer to combine all the elements before enjoying.

Ingredients 3½ oz (100 ml) freshly squeezed grapefruit juice 1 oz (25 ml) reposado tequila (or 2 oz/50 ml to really get the party going) Pinch of salt ¼ tsp sugar Ice cubes Grenadine, to drizzle Club soda, chilled, to top off Lime wedge You will also need Cocktail shaker Tall glass Cocktail stirrer Makes 1 cocktail
Non-alcoholic variation To make a non-alcoholic variation, simply omit the tequila and increase the sugar, to taste.
Step 1
Put the grapefruit juice, tequila, salt, and sugar in a cocktail shaker with ice and shake. Pour into a tall glass (don’t strain, you’ll want the ice).
Step 2
Drizzle grenadine syrup into the glass, allowing it to sink to the bottom. Top off gently with chilled club soda, pouring it down the side of the glass or over a spoon so that it doesn’t disturb the juice too much and you get a pretty graduated effect.
Step 3
Squeeze a lime wedge into the glass, and drop in the empty husk. Stir just before drinking to mix all the layers together.
