Place flour, sugar and butter into a food processor and process until fine. Add egg yolk and process until combined. Cover mixture and let sit overnight.
Roll mixture out and cut with cookie cutters into your favorite shapes.
To put candy in the cookies, use a small cutter to cut holes in the cookies. For jam tarts, use the leftover pieces removed from candy cookies as the lids of the tarts.
Cook for 20–30 minutes at 360°F (180°C). For candy cookies, place candy into the holes after 15 minutes.
When the cookies have cooled, dust with icing sugar or use the icing as a glue to attach decorations such as colored sugar or crushed candy.
