There are a surprising number of goat cheese cookie recipes that you've probably never heard about: chocolate chip cookies with goat cheese; Italian polenta cookies with rosemary; even simple sugar cookies.

Goat cheese makes for a naturally moist cookie, and one that balances salty and sweet. The cookies below just have six ingredients with dried cranberries and goat cheese that create a distinctive combination.

Ingredients:
3/4 cup sugar
8 tablespoons (1 stick) unsalted butter
1 (8-ounce) goat cheese, softened
1 egg
2 cups all-purpose or whole wheat pastry flour
1/3 cup dried cranberries
Preheat oven to 350 Fahrenheit. In a food processor or electric mixer, beat butter, sugar and goat cheese until light and fluffy, about 1 minute. Beat in egg until well combined.

To incorporate in the flour, blend in until just combined or mix in by hand.

Roll 1 to 2 tablespoons of dough into balls and arrange 2 inches apart on a parchment paper–lined baking sheet.

Use a fork dipped in water to flatten each cookie. If you want a clean imprint, you'll probably need to repeatedly warm the fork under hot water. This is one of the most challenging steps of the recipe.
Bake until just firm and deep golden on the bottom, about 15 minutes.
